The grapes are gently crushed and a pre-fermentation maceration occurs at 12ºC. What sets this wine apart is the length of pre-fermentation maceration and the rigorous extraction early in fermentation. The juice is then inoculated with selected yeasts and fermentation takes place in temperature-controlled stainless steel vats.
